When I first pulled up to MILLAR’s on Fagului Street, I honestly wasn’t sure what to expect from this four-star property tucked away in Sovata. The building has this understated elegance that doesn’t scream for attention — which, after staying here, I realize perfectly captures the whole experience. You know what struck me immediately? The attention to detail in even the smallest things, like how the staff genuinely seemed to care about making sure I felt welcome rather than just checking me in.

I spent my mornings on their terrace just watching the mist rise off the lakes — it’s sort of mesmerizing, actually.

My room faced the hills behind the town, and I’ll be honest — I initially thought a lake view would’ve been better. Wrong call on my part. Chef Millar (yes, it’s a family operation) sources ingredients from local farms in the Mureș Valley, and you can taste the difference — especially in their traditional Romanian dishes with modern twists. I had this incredible ciorbă de burtă that somehow managed to be both authentic and refined. What I really appreciated was how they handle the dining experience; it never felt rushed, even during busy evening service when other hotels might push you through quickly.

The spa treatments incorporate local salt and thermal water, the housekeeping team somehow manages to refresh your space without disrupting your routine, and there’s complimentary parking right on-site (which, trust me, matters in Sovata during peak season). Most importantly, the staff genuinely knows the area and can point you toward experiences beyond the typical tourist checklist.
